Butter boards have gone viral over Tik Tok with over seventeen million views. It has sparked new creative ways to look at a common grocery list item. “So, this one here, we did a Savory board. We have taken your plain old unsalted butter. We’ve whipped it and incorporated a lot of air so it’s light and fluffy and if you can see the color has changed, right? So, it is very pale white.” Chef’s Table main Chef and Instructor Erin Circelli-Russell said about the creation of her butter board.

Owen Earl, social media coordinator for Fanshawe mentions that he was not expecting a butter charcuterie board to look anything like this. The theme Circelli-Russell was aiming the butter board to resemble a Christmas tree as we look ahead to this coming holiday season. “So, when you mix it all together, you get that sweet Savory salty spicy it hits all of those fun flavors. It is a fun and flirty dish and that’s why people are loving it right now.” she said.

Two butter boards were created and one of the boards were served out to a few Fanshawe staff members. They were not expecting to be served a butter charcuterie board while they came by for their breaks. “I’m pleasantly surprised, it’s colorful, it’s delicious and it’s kind of fun to eat. It also looks so nice. Cheers, Chef Erin” one of Fanshawe’s staff members said about the butter board.

Almost one hundred and twenty thousand tons of butter was produced in the Canadian dairy sector in 2021 according to Agriculture Canada. Erin Circelli-Russell mentions that she has seen a wild variety of charcuterie boards from peanut butter to McDonalds boards. She hopes to see her students and others get creative this holiday season with butter boards.
